BASIL SORBET

  • 2 cups fresh basil leaves
  • 2 cups whole milk
  • 1 cup cream (35% fat)
  • ¾ cup sugar
  • 1 tbs lemon zest
  • ¼ tsp salt
  • 6 free range egg yolks

 

  1. Combine Basil, milk, cream, sugar, zest, salt and yolks in a blender and puree until smooth.
  2. Pour the mixture into a clean saucepan and gently heat until the sugar completely dissolves.
  3. Remove from the heat and pour through a fine strainer. Chill in the refrigerator until cooled completely.
  4. Pour into an ice cream maker and freeze according to manufacturer’s instructions.
