BBQ SQUID WITH CHILLI MINT DRESSING
- 2 lemons
- ½ cup extra virgin olive oil
- Sea salt and freshly cracked pepper
- 4 long red chillies, deseeded and finely chopped
- Small handful of mint, roughly chopped
- 8 small squid tubes
- 2 good handfuls of rocket, washed and dried
- Heat a BBQ or flat grill over high heat.
- To make the chilli dressing, combine the juice of half a lemon with extra virgin olive oil. Season mixture generously with sea salt and freshly cracked pepper before adding the chopped chilli and mint to the bowl and stir to combine.
- Lay the squid tubes flat and score in a diamond pattern on the diagonal. Season generously with sea salt and freshly cracked pepper. Cook the tubes scored side down for 1-2 minutes before turning them over. You will notice they will curl up when they’re ready.
- Pop the rocket into a mixing bowl and season with some of the chilli dressing, reserving some for the squid itself.
- Arrange the squid between the serving plates with the dressed rocket alongside. Drizzle the remaining chilli sauce over the squid and serve right away with a lemon cheek.
