BBQ SQUID WITH CHILLI MINT DRESSING

  • 2 lemons
  • ½ cup extra virgin olive oil
  • Sea salt and freshly cracked pepper
  • 4 long red chillies, deseeded and finely chopped
  • Small handful of mint, roughly chopped
  • 8 small squid tubes
  • 2 good handfuls of rocket, washed and dried
  1. Heat a BBQ or flat grill over high heat.
  2. To make the chilli dressing, combine the juice of half a lemon with extra virgin olive oil. Season mixture generously with sea salt and freshly cracked pepper before adding the chopped chilli and mint to the bowl and stir to combine.
  3. Lay the squid tubes flat and score in a diamond pattern on the diagonal. Season generously with sea salt and freshly cracked pepper. Cook the tubes scored side down for 1-2 minutes before turning them over. You will notice they will curl up when they’re ready.
  4. Pop the rocket into a mixing bowl and season with some of the chilli dressing, reserving some for the squid itself.
  5. Arrange the squid between the serving plates with the dressed rocket alongside. Drizzle the remaining chilli sauce over the squid and serve right away with a lemon cheek.
